Everyone loves Sunday lunch, and roast chicken remains a firm favourite. Here's a new twist on the standard roast. Combine it with braised spinach and lovely rosemary roast potatoes and you'll be on to a winner for sure! Beautiful stewed fruit crumble and a dollop of cream for afters - lovely!
Roast chicken remains one of my favourite dishes at home, so that's why I've included it here. I've given it a twist by popping a whole par-boiled lemon inside the bird during cooking!
Spinach is a great leaf vegetable, whether you eat it cooked or use baby spinach raw in salads. Spinach is an excellent source of Vitamins A and C, as well as antioxidants, and contains four times the beta-carotene of broccoli, so is very good for you! It also contains high levels of folic acid, and the nutrients within spinach can also help to lower blood cholesterol. One of the healthiest veggies around!
I know what you're thinking... stewed fruit = school dinners = not very exciting. But I'm here to change your mind - stewing, or gently poaching, fruit is a fantastic way of altering your perceived flavour of it, and adding a crumble topping is the easiest way to turn stewed fruit into a scrumptious dessert.

Gotta love a good roast and the best partner to our Chicken with rosemary potatoes is superstar white variety, Chardonnay. As roasting produces a much greater intensity of flavour, look for an example from the New World (Australia, Chile, South Africa & The USA) which generally should also carry a similar richness.
