At least once in our lives we've all needed to really impress someone and this menu will do just that. A delicious fresh bean and yoghurt starter, followed by juicy lamb cutlets and a chocolate, orange and caramel dessert. Delicious!
This is a really great combination of flavours, colours and textures and, of course, is best made with fresh broad beans in season. The smaller beans can be used as they are, but the mid to large ones, with tougher skin, will have to be peeled after cooking. Just pinch the skin between your nails and the bean will pop out - simple. I think my broad bean combo is pretty much perfect, but you can try it with fresh cannellini beans as well if you fancy a change.
This dish is fantastic and you can literally have it ready in just over 5 minutes. Use either wild mushrooms that are in season, like girolles, trompettes de la mort and pieds de mouton, or more readily available farmed mushrooms like field, chestnut or oyster, as these are really tasty when cooked properly.
The nice thing about this recipe is that the fruit accompanying it can be varied - certain things work really well with chocolate, like oranges, clementines, apricots or cherries, so give them a try.

You might have your work cut out for you here, but a sure fire way to impress the socks off your Mother-in-law (sorry for the visual!) is to pair up your lamb with a nice big glass of spicy Shiraz! Great Shiraz - or Syrah as it's known France - definately falls into the medium/full bodied red basket with better examples jammed full of plum, cherry and black pepper smells. Australia is producing some of the finest examples money can buy - wines that are bound to win you the big thumbs up!
